Following two hectic weeks of travel in China, we escaped here, to the quiet rice terraces surrounding Pin An village outside of Guilin. During the steamy growing season in June, the fields were shining with water and bright green with mature seedlings. The humidity was so thick that we could barely see the valley floor as we hiked into the graduated terraces, but the view of the fields, which have been farmed this way for about 800 years, was incredible.
