Celebrity chef Michael White became a fan favorite with a string of hit New York City restaurants, including Marea, Ai Fiori and Vaucluse. But now you can taste his upscale Italian fare in a more tropical setting: the Bahamas.
When Atlantis Paradise Island celebrated its 25th anniversary in 2023, it debuted Paranza, Italian for “small fishing boat.” Fittingly, White uses his newest establishment to navigate coastal Italian fine dining and bounty from the surrounding waters.
We caught up with the chef while he was traveling through Italy to learn more about the “culinary capital of the Caribbean,” his favorite destinations and his go-to comfort food.
Where are you in Italy?
I’m currently traveling in the south of Italy, along the stunning Amalfi Coast, which is one of my favorite places in the world. This region is not only breathtakingly beautiful but also a treasure trove of culinary inspiration. Here, I’m resetting my palate by indulging in the freshest, most authentic flavors Italy has to offer. I’m visiting local food producers, learning about their traditional methods and sourcing the finest ingredients.
Additionally, I’m spending quality time with my chef friends, exchanging ideas and techniques that invigorate my passion for cooking. Italy truly feels like my second home. The warmth of the people, the rich culinary heritage and the vibrant food culture make it an endlessly inspiring place for a chef.
Why did you choose the Bahamas for your newest restaurant, Paranza?
The Bahamas and The Cove at Atlantis Paradise Island are incredible, and they offer an unparalleled setting for Paranza. The opportunity to be a part of such a prestigious culinary community is truly a privilege. Joining an esteemed group of chefs like José Andrés, Alon Shaya, Nobu Matsuhisa and JJ Johnson at the resort is an honor.

The island’s rich culture, stunning natural beauty and abundance of fresh, local ingredients make it the perfect location to create a unique dining experience.
What are dishes there that diners must try?
Diners should definitely try our locally sourced grouper, conch crudo and, of course, our homemade pastas. One of my personal favorites is the tagliatelle with wild mushroom ragu. The incredible ingredients we get here allow us to keep the menu seasonal and fresh all year round.
When you aren’t in the kitchen, what do you like to do in the Bahamas?
I love going out on the water when I’m in the Bahamas. It’s the perfect way to recharge my batteries. There’s nothing quite like a quick swim in the ocean as the sun rises in the morning; it’s incredibly invigorating and sets a positive tone for the rest of the day.
Beyond swimming, I enjoy exploring the beautiful beaches, taking boat trips to the surrounding islands and indulging in water sports like snorkeling and jet-skiing. The natural beauty and serenity of the Bahamas provide the ideal backdrop for relaxation and adventure, making every moment spent there truly special.
Where do you eat in the Bahamas?
When I visit the Bahamas, I spend every night in the kitchen at Paranza. If I manage to finish early, I like to explore the other restaurants on the property. The sushi at Nobu is exceptional, and sometimes, all I crave is a burger from Sip Sip in Marina Village with all the amazing yachts in the harbor around me.
What’s your go-to comfort food?
Pasta has always been my go-to comfort food. Ever since I was a child, both eating and making pasta have been a passion of mine. There’s something incredibly comforting about the process of creating a dish from scratch, from mixing the dough to rolling it out and shaping it by hand.
The versatility of pasta allows for endless variations, whether it’s a rich, creamy Alfredo; a hearty Bolognese or a simple but elegant aglio e olio [garlic and olive oil]. Each bite brings back cherished memories of family meals and cozy dinners, making pasta the ultimate comfort food for me.
Where do you find inspiration for your cooking?
Growing up in Wisconsin, visiting farmers markets always inspired me from a very young age. Even now, I love connecting with local farmers and fishermen. The thrill of filling my car with fresh ingredients and transforming them into the perfect meal never fades. The spontaneity and surprises of each visit continually fuel my creativity and passion for cooking.
You have a house in the Hamptons. What are your favorite spots there?
I love going to Balsam Farms for fresh vegetables and Gosman’s to pick up fish for dinner. When it comes to dining out, Bostwick’s is perfect for clams and chowder, and La Fondita offers the best Mexican food!
What are your favorite travel destinations?
Italy, specifically Sicily, holds a special place in my heart. My initial visit dates back to 1993, and my affection for this country has only grown since then. It was in 1997, during another trip to Italy, that I met my wife, Giovanna. Italy feels like a second home to me, and I deeply cherish my connection to its culture and people.
Additionally, I have a profound appreciation for Asia, particularly cities like Hong Kong, Bangkok, Singapore and the serene beauty of Bali. The vibrant food scenes and rich cultural tapestries of Asia have always inspired me.
